Kalamazoo, Mich., releases
Eccentric Ale
an herbal, spiced beer that's aged for a year, annually on the Friday
before the Winter Solstice. If you want to try it, you'll have to go to
the brewery when it's released, because that's the only place it's sold
-- and the parties have become legendary. "People are in the parking
lot at 8:30 a.m. waiting for the door to open at 9," said president
and brewmaster Larry Bell. Eccentric Ale usually sells out on the first
day.
This Eccentric Day party
at the the Eccentric Cafe (attatched to the brewery at 315 E. Kalamazoo
Ave., 616-382-2338) features an Eccentric Buffet. Choices include stinky,
exotic food, which in the past has included eel, head cheese, blood sausage
with tongue, assorted fishes, hot peppers and pickled onions.
Eccentric Recipes
Peanut Butter Pork
Chops
4 Pork chops
Shortening or oil
4 Onion slices
1/4 C creamy Peanut butter
1/4 C Milk
3/4 C condensed Mushroom soup
1 t Worcestershire sauce
1 t Salt
1/8 t black pepper
Brown pork chops on both sides in a little shortening or oil. Pour off
fat, leaving chops in frying pan. Place an onion slice on top of each
chop. Mix peanut butter, mushroom soup, milk, Worcestershire sauce, salt
and pepper. Pour over chops. Cover and simmer over medium to low heat
for 45 minutes. You may want to move the chops around in the pan from
time to time to keep them from
sticking.
Potato Fudge
1 Medium sized potato
2 T Butter
1/2 c Cocoa
1/8 t Salt
1 t Vanilla
2 3/4 C Powdered sugar
1/2 C Chopped nuts (optional)
Boil potato until tender. Mash. While still hot, add butter, cocoa, salt
and vanilla. Gradually stir in sugar until mixture makes a stiff dough.
Spread 1" deep in greased pan. Press chopped nuts into top of candy.
Let stand 2 hrs. to become firm. Cut into squares. Makes about 2 lb.
Tomato Jam
12 C Tomatoes (measure after peeling/cutting)
2 Oranges
3 Lemons
10 C Sugar
2 T Whole cloves
2 T Ground cinnamon Tie spices in cotton cloth bag.
Cut peeled tomatoes in small pieces. Slice oranges and lemons in thin
rings and quarter the rings. Remove seeds, discard. Pour off juice from
tomatoes. Add sugar. Stir until the sugar is dissolved. Add oranges, lemons,
and bag of spices. Place mixture in large heavy pot and place on high
heat. Bring to a rapid boil, stirring often. (watch carefully!). Cook
until clear and thick (45 to 50 minutes) Pour into sterilized jars and
seal at once while hot. Makes 7 pints.

2 C Flour
2 C Sugar
1 T Butter
1/2 C Buttermilk
1 C Coca-Cola
2 Eggs
1 t Baking soda
1 t Vanilla
1 1/2 C Miniature Marshmallows
3 T powdered baking Cocoa Icing
1 C Butter
6 T Coca-Cola
3 T Powdered baking Cocoa
1 pk Powdered sugar (a full box)
1 C Chopped Nuts (optional)
Preheat oven to 350. Mix flour and sugar. Heat butter, cocoa and soda
to boiling and pour over flour and sugar. In separate bowl mix buttermilk,
eggs, soda, vanilla, and marshmallows. Add to flour mixture and mix well.
Batter will be thin. Bake in 13 x 9" pan for 30-35 minutes. While
the cake is baking, prepare the icing as follows: Heat butter, cocoa and
soda to a boil. Pour over sugar and mix well. Add nuts. Ice cake while
both cake and icing are hot.
Garlic Ice Cream
1-1 1/2 T unflavored gelatin
1/4 C cold water
2 C milk
1 C sugar
1/8 t salt
2 T lemon juice
2 cloves garlic, minced
2 C whipping cream Soak the gelatin in cold water. Bring the milk, sugar,
and salt to a boil. Dissolve the gelatin in the hot milk. Cool, then add
the lemon juice and garlic. Chill the mixture until slushy. Whip the cream
until thick but not stiff and fold carefully into the mixture. Freeze
in a mold, or in a foil covered tray.
Dandilion Wine
1 qt. dandelion blossoms
1 gal. hot water
3 1/2 lb. sugar
2 lemons, cut in chunks
2 oranges, cut in chunks
Pour hot water over dandelion blossoms. Let stand for 24 hours. Strain
through a jelly bag. Heat juice (throw away what gets caught in the jelly
bag) and add sugar, lemons and oranges. Reheat (do not boil), then put
in a stone jar. Let ferment. Skim everyday for 6 or 7 weeks, removing
fruit after 2 weeks. Put in sterile, sealed bottles.

Recipe #1
3 C self-rising flour
1 T sugar (optional)
1 normal sized can beer (room temperature)
1 egg
1 T water variations 3 C self-rising flour
2 C cheddar cheese
2 T Caraway or dill
1 chopped jalapeno
2 C minced tomatoes
1 t each oregano, basil &thyme
1/2 C chopped fresh basil
1/2 C grated Parmesean cheese
Preheat oven to 375. Combine flour and sugar and any optional ingredients
you choose, pour in beer and stir until moist. Pour batter into greased
&floured loaf pan and let sit for about 15 min. to rise. Dough will
be gooey. Beat egg and water together. Brush top with egg mixture and
bake for about an hour or until pick comes out clean. When done, brush
top with butter. I like to do just the cheeses, or cheese and herbs together,
or cheese and jalapenos, orherbs and tomatoes, or tomatoes and cheese,
or cheese, tomatoes and herbs, or just herbs. Basically, just use your
imagination and try what sounds good.

3 C Flour (NOT Self-Rising)
1 T Honey or Sugar
4 t Baking powder
12 oz Beer (room temperature)
2 t Salt variations 3 C self-rising flour
2 C cheddar cheese
2 T Caraway or dill
1 chopped jalapeno
2 C minced tomatoes
1 t each oregano, basil &thyme
1/2 C chopped fresh basil
1/2 C grated Parmesean cheese
Grease 9x5x3" loaf pan and preheat oven to 350. Mix flour, salt,
baking power and any optional ingredients you choose together in a large
bowl. Add beer and honey. Stir together until well mixed. Spread batter
in prepared pan. Bake for 45 min or until browned and a wooden pick comes
out clean. Turn out on cooling rack. Cool completely before slicing. I
like to do just the cheeses, or cheese and herbs together, or cheese and
jalapenos, orherbs and tomatoes, or tomatoes and cheese, or cheese, tomatoes
and herbs, or just herbs. Basically, just use your imagination and try
what sounds good.
- Rotten Shark | Iceland
Shark is supposed to be dangerous to eat so it is buried deep in the sand,
usually far away from and houses to keep the smell away. It results in
both soft and hard pieces of shark (skyrhakarl and glerhakarl) which is
cut and served in small cubes. According to Learning Space, "the
tough glerhakarl is recommended for beginners, as the soft skyrhakarl
can cause an involuntary gagging reaction due to its texture."

This lovely dish features beef testicle(s) as the savory star. Some instructions..."Boil
the testicles for five minutes in lightly salted water, then drain them,
cool them under running water, peel the brains, and cut the meat into
pieces about an inch in diameter." Artichokes, zucchini, carrots,
tomatoes, and porcini mushrooms are then added and it is all seasoned
with fennel. Probably not bad if you didn't know what you're eating.

While the ingredients are hardly as exotic as the others, these concoctions
have funny names. A pie floater is a meat pie, floating in a pool of pea
soup, topped with some ketchup. I can get you the full recipe if you want.

made with a bag of lamb's intestines and 20 cups sheep or pig blood. These

These can be served on a cracker as a bar snack or appetizer. Also, they
can be served in soups or on toothpicks at a party. I'm sure this trend
will reach North America very soon, be sure to keep an eye out.
